Quarantine Baking!


Please, please tell me I am not the only one who has been eating everything in sight during this quarantine time.  I love to cook, but I don't do much baking.  But I have even been doing some baking because all of a sudden my sweet tooth is acting up.  I have 2 yummy cookie recipes to share with you.  I usually do slice and bake cookies, so my family was very excited when I actually made homemade cookies.
My school had a baking day and our amazing art teacher shared her chocolate chip cookie recipe.  I have since made them twice, they are so good.  Now...I did do a couple of porch drop offs to some friends who were having birthdays and who work in a doctors office....had to share the sweets.  I promise you won't be disappointed in these delicious cookies.

Best Chocolate Chip Cookies

Ingredients:
2 cups all purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1 cup butter, barely melted but not too hot
3/4 cup light brown sugar, packed
2/3 cup granulated sugar
2 teaspoons vanilla extract
1 teaspoon apple cider vinegar
1 large egg
2 cups semisweet chocolate chips
Coarse sea salt (I didn't use this either time)

Instructions:
Preheat oven to 350 degrees.  Line a baking sheet with parchment paper.  In a medium bowl, mix together the flour, baking soda and salt.  Set aside.  In a large bowl, beat together the butter, sugars, vanilla extract and the vinegar until smooth.  Beat in the egg just until combined.  Mix the flour mixture into the wet mixture just until combined.  Stir in the chips.  Drop cookie scoops onto the cookie sheet.  Bake for 8 to 10 minutes.  Remove from the oven and immediately sprinkle each cookie with a little sea salt.  Allow to sit on the sheet for 10 minutes before moving to a rack to cool.

My other baking experiment was Peanut Butter Cookies.  These turned out really good, too.  This is probably a common recipe, but I have never made homemade Peanut Butter Cookies, so it is new to me.  It only has 3 ingredients, so will probably be one I can make more often.

Peanut Butter Cookies

Ingredients:
1 cup peanut butter
1 cup suger
1 egg

Instructions:
Drop on cookie sheet.  You can criss cross with a fork before baking.  Bake 10 - 12 minutes at 325 degrees.
