10 Minute Meals: Chicken, Bacon, Ranch Pasta Salad



I love to cook and most days I enjoy it, however; some days I'm just not feeling it. On long, stressful days, the last thing I want to do is cook a big meal. That doesn't mean that I want to run and grab fast food either. On days like this, I like to make a quick pasta salad. It's fast, easy and one of my go-to meals.



The great thing about pasta salad is that it is so versatile, the possibilities are endless. My favorite is Chicken, bacon and ranch pasta salad. When I make mine, I use Gluten Free noodles, I don't have an allergy, I just really like the taste better, but you can use whatever type of noodle you like. Also, this makes a great make-ahead meal. You can make it the night before and pop it into the fridge, then it's ready to go the next day. 

Oh, and a way to cut down on time for this meal..... rotisserie chicken! Grab a chicken at the store and get to pickin'. 

Ingredients:


2 Grilled or Rotisserie Chicken Breasts-cut into pieces
                                      1 12-16oz Box of Penne or Rotini Noodles
                                      1C Ranch Dressing
                                      1C Cheddar Cheese
                                      1/2C of Bacon Pieces



Cook noodles until al dente, drain after cooking and rinse with cold water. Pat noodles to dry. 
Mix all other ingredients together and enjoy.





Most of this recipe is to taste. Add as much, or as little of each ingredient that you like. I like to add sliced, raw almonds, and black olives. Need more of a crunch? Add some croutons! Like I said before, the possibilities are truly endless.
