If there is one breakfast item my kids crave from their grandma's kitchen, it's her melt in your mouth French Breakfast Muffins. These muffins are sweet, moist, and coated in a mixture of cinnamon and sugar. They're tasty any time of day or night, a great bite when you're struck with a sweet craving. They're best, however, when they're fresh out of the oven and still warm. Is your mouth watering yet? Keep on reading for grandma's recipe so you can make these delicious muffins yourself!
French Breakfast Muffins
You Will Need:
1 Large Egg
1 1/2 Cups AP Flour (We like King Arthur Flour best)
1 1/2 Cup Granulated (White) Sugar
1 1/2 tsp Baking Powder
1 1/2 tsp Cinnamon
1/4 tsp Nutmeg
1/8 tsp Salt
1 tsp Vanilla
2/3 Cup Unsalted Butter
1/2 Cup 2% Milk
Directions:
1. Preheat the oven to 350 degrees.
Grease muffin tin cups.
2. In a large bowl, whisk together 1/2 Cup of sugar, and the remaining dry ingredients.
3. In another bowl, beat the egg, and mix together with milk, and 1/3 cup melted butter. Add in the vanilla and mix well until all ingredients are incorporated.
4. Combine the wet and dry ingredients, taking care not to overmix the batter.
5. Fill muffin cups 1/2 of the way full and bake in a preheated oven at 230 degrees for 20 - 25 minutes. *Time and temp may vary, depending on your oven.
6. In a large bowl, mix together 2 tsp of cinnamon, 1/3 cup of sugar, and 5 TBSP of melted butter.
7. As soon as the muffins are baked through, remove from the muffin tin and roll each muffin in the cinnamon and sugar mixture to coat evenly.
Serve immediately- best when served warm!
If you give a mom a muffin, she'll probably ask for a cup of coffee.
