Let me start by saying that I am so sorry I don't have a picture of this beautiful fruit salad in the serving bowl. I made this to take to a family get together that was an hour away. I put it into a pretty glass serving bowl when I arrived at my cousin's house and it was so colorful and pretty, but I forgot all about taking a picture. Let me tell you how easy this was and how the entire bowl was gone at the end of the evening!
The can be done with any fruit you would like to use. The only other ingredient other than the fruit is instant vanilla pudding mix. My recipe calls for bananas, but I didn't use them this time because I knew it was travelling a little ways and would not have time to go back in the fridge. I didn't want the bananas to start to brown. I have made it with them before and they are definitely a plus. This was a very popular addition to our dinner. It's always nice to have a little healthy dish to go along with all the yummy unhealthy things my cousin cooked...haha!
Everything you need
The pineapple with juice mixed with the pudding mix
Fruit Salad
2 bananas
1 lb. diced pineapple
1 lb. sliced strawberries
1 lb. mandarin oranges
1 lb. green grapes
1 box vanilla instant pudding
Pour pineapple and juice into a bowl. Add pudding mix and stir until creamy. Stir in drained oranges. Add any additional fruit. Refrigerate. Don't let it sit too long, as the bananas will brown.
