Happy Tuesday, friends! I always feel a bit awkward sharing dinner recipes so early in the day, but I also feel like there may be a few people that could really use a dinner idea and this way I'm giving you enough time to shop (if you need to), prep it and let it cook away. Plus, we made this a few weeks ago and it was pretty fantastic, so I had to share it with you all!
This summer, I haven't been meal planning as much as I like to. I make a quick list of "necessities" and it's become a sport, of sorts, to get what I need and get out of the grocery store as quickly as possible. Lately, the sport has grown to include seeing how long I can go between visits to the store. This means, making the most out of what I have in the house and trying new combinations. That's exactly how this recipe was created.

Slow Cooker Chicken Sloppy Joes
Ingredients:
1.5 lbs boneless and skinless chicken thighs
1 medium onion, diced
2 green peppers, diced
2 cups of your favorite sloppy joe sauce (I used canned this time because I had it, but I would have preferred homemade)
Directions:
Place chicken in bottom of a 6-quart slow cooker and cover with diced peppers and onion. Pour your sloppy joe sauce over the top. Cover the slow cooker and cook on low for 8 hours, or until your chicken is tender enough to shred. Shred the chicken with two forks and serve some (about 1/4 cup) up on a bun. It's also really good over tortilla chips.
