I was invited to a Freezer Meal Swap and I was so excited to take one of my families favorite meals. This Taco Casserole is really easy to make and is perfect right out of the oven or to put in the freezer for a meal at a later date. It has become my go to meal if I need to take someone dinner.
We like this Taco Casserole so much that there are 4 of them in my freezer right now that I can pull out over the next several weeks and pop into the oven for a quick, yummy dinner on a busy evening. I am all about easy dinner because we are always so busy.

We love to add a spoonful of sour cream and eat with chips. So yummy!
Taco Casserole
2 lbs. hamburger meat or turkey meat, cooked and drained
1 package taco seasoning
2 cans black beans
2 cans diced tomatoes with green chilies
2 cups corn
4 cups rice, cooked
Shredded cheese
This makes 2 9x13 casserole dishes. When I make it we eat one that night and one goes in the freezer.
Brown your meat and drain. Add the taco seasoning. Stir in the black beans, tomatoes and corn. Grease casserole dish. Add the 4 cups of rice to the casserole dish and then cover with the meat mixture. Spread cheese over the entire dish. You can use as much cheese as your family likes. I use the taco cheese that is already shredded. Pre-heat oven to 350 and bake your casserole for 25-30 minutes; until cooked through and cheese is melted.
If freezing this meal, cover un-cooked casserole tightly with foil and place in the freezer. Remove the day before you plan to use it and thaw in the fridge. Same baking instructions as above.

This does look good and easy. And knowing it is a good freezer meal makes it even better, I'd like to try it! I bet it would be a bit hit at a get together!
