Start Your Day with Easy Avocado Toast


Do you feel rushed in the mornings and just grab whatever's easy to grab and eat your breakfast in the car? This year, I'm trying to be more intentional about meal planning, and while I love our local downtown coffee shop and love supporting them, I was appalled by how much money I was spending on a cup of coffee and a quick pastry for breakfast three days a week! The expense really stacks up, and so do those extra calories, unfortunately.

Simple and healthy breakfasts are not that hard to make, and they don't have to be complicated or cost a lot in terms of ingredients. One of my go-to breakfasts this year is avocado toast. Avocado is one of my favorite foods, and honestly, I'll eat it with just about anything! Avocado is delicious on toast and makes a healthy, yummy quick breakfast that'll fill you up and give you lots of energy for the day ahead.

How to make a simple Avocado Toast


Friends, all you need for avo toast is bread and fresh, ripe avocado. You don't even have to serve an egg with it, and I don't always have an egg- sometimes I just stick with the toast and the avo.

For the vehicle (the bread), you can change it up over and over again. I usually use whatever we happen to have at home. My choices (last time I made this) were either a French bread baguette or the simple white loaf my husband had baked two days prior. I chose to try it on the homemade bread.

Get your toast on!


Toast the bread! If you can, grill the bread! I love grilling crusty bread for avo toast right on the stove top (in a cast iron grill pan). I recommend the grill pan above if you don't already have one. It's perfect for grilling up bread for sandwiches, as well as grilling just about anything else without ever having to step foot outside. It's also pre-seasoned and easy to clean.

Tip for grilling bread: Don't oil or butter your bread. Lightly oil your grill pan (or add your choice of fat) and gradually heat the pan up. This will keep your bread from getting soggy with oil.


Add the avo!

Next up, add your avocado. I use 1/2 of an avocado when I make avo toast. In this instance, I scored my avo (diced), and then scooped it out into a bowl, and gave it a quick mash. I added a hint of lime juice for that extra tang (you can use lemon if you don't have lime). If you'd rather not mash the avo, just add it to the bread (toasted) sliced, and laid out across the bread.

Top it!


Sometimes, I like to add one fried egg (over easy) on top of my avo toast. I add a sprinkle of sea salt and cracked black pepper over top.


Slice it & watch that sunny yellow egg yolk run, baby!


I actually love slicing the egg-topped avo toast in half (diagonally, darling), and then watching the egg yolk run down. I have no idea why, but it's very satisfying to see. Once sliced, top with some parsley (or just give it to your pet bunny, instead), and dig in! This breakfast is so rich and creamy... almost like eggs benedict, but so much healthier!

I can guarantee that if you're an avo-lover, you will love this simple breakfast! It takes about 5 minutes to prepare, and you know that this would run you $10.00 if you ordered this for brunch somewhere. I buy 2 - 3 avos a week for around $3.00, and since the bread is homemade, it's cheap, and I don't have to tell you how cheap eggs usually are.
