I'm not usually the baker in my house, but when the mood strikes, there's no stopping me from satisfying the urge to bake something yummy. During the holidays, I do enjoy baking cookies, and I sure do have my favorites. Our family tries to plan an annual cookie baking afternoon each Christmas, but this year, everyone's been busy, sick, or the snow has thwarted our plans. We were snowed in over the weekend, and it felt like the perfect time to break out the mixer and whip up some yummy holiday cookies.


One of the reasons I don't bake a ton of cookies this time of year is because I don't have a ton of room to store them once they're baked and cooled. This season, though, I have the perfect new storage container for storing holiday treats (like cookies) and keeping them fresh.

Both my mom and grandmother loved Tupperware, and now that I'm a grown-up (even though I don't feel like one), I love Tupperware, too! Grinchmas Cookies

You Will Need: 

1 Cup unsalted butter, softened
1 2/3 Cups granulated sugar
2 large eggs
2 tsp vanilla extract
5 drops green food coloring
3 1/3 Cups all purpose flour (I used Gold Medal)
2 tsp Baking powder
1 tsp sea salt
1 1/2 Cups large dark chocolate chips
1/2 Cup red and green M&Ms
*Additional 1/2 Cup M&Ms for topping


Directions

In a large bowl or in your mixing bowl, combine butter and sugar. Beat on medium speed for about 1 minute until combined and fluffy.

Add eggs one at a time and continue mixing.

Add vanilla extract and drops of food coloring. You can add more or less food coloring depending on the color you'd like to achieve.

Whisk together dry ingredients in a separate bowl. With the mixer on low speed, gradually add the dry mixture to the wet mixture. I go about 1/2 a cup at a time. Mix until all ingredients are well incorporated, being careful not to overmix.



With a spatula, add in the dark chocolate chips. *You can use regular chocolate chips if you prefer not to use dark. Next, add 1/2 cup of red and green M&Ms. Gently fold the candies and chocolate chips into the cookie dough.


Scoop and roll cookie dough into 1 - 1 1/2 inch balls.

Bake in a preheated 350-degree oven for 11-12 minutes.
*I baked my cookies on my Silpat for soft-bottomed cookies.


Gently press 2-3 M&Ms into the top of each cookie when they're still warm. Allow cookies to cool slightly on the baking sheet before transferring them to a wire rack for complete cooling.

Cookies will be soft and cake-like!

These cookies are so good! They turned out so well, and are amazingly yummy! They are soft, semi-thick, and cake-like. I don't usually care for cookies that are thick and cakey, nor do I like cookies with candies in or on them, but these are the bomb! They're not too sweet, and the dark chocolate definitely cuts through the sweetness from the candies. I had one of these while they were still warm, and it was so good!
