Fudge Is Taking Over My Fridge!

I seriously went overboard with the Christmas fudge this year.  I am not one to do Christmas baking but I saw a couple of recipes that I wanted to try out this year so decided to spend a day in the kitchen.  I gave all of Aiden's teachers and lots of family members baked treats this year.  I did party mix, cool whip cookies, peppermint bark and fudge.  It was all very easy things but the fudge was so super easy that I just kept making it and kept making it!  At one point, I had two
shelves in my fridge that was just fudge!
I even got into the groove enough to branch out and try more flavors.  Chocolate was the most popular but I also did peanut butter fudge, butterscotch and Andes mints.  They were all very good, but the butterscotch never set right and it was just a big hot mess....a pretty tasty mess, but a mess all the same!  I know Christmas baking time is over, but with this simple recipe why not make fudge all year long.  I have enough to last all year long.  So, I wanted to share the recipe with you all.  You seasoned bakers probably have been doing this for years but it was new for me and I'm hoping there are other newbies out there who need a good fudge recipe.

Peanut chips


1 bag of semi-sweet chocolate chips (or other flavor chips)
1 can sweetened condensed milk
1 teaspoon vanilla flavoring

Pour chips and sweetened condensed milk in a microwave safe bowl and heat for 1 minute.  Stir and add the vanilla.  Heat for 30 more seconds. I usually did 15 and checked it and stirred then the last 15.  Once all is melted together, pour into a casserole dish lined with parchment paper.  I put mine in the fridge for a couple of hours to set and cool.  Slice and serve!
