One Pan Chourico and Veggies


Happy Tuesday, friends! Today is Matt's birthday, so I thought it would be fitting to share one of his favorite dinner recipes. When we first started celebrating birthdays together, back in 1997, we went out to eat more often than not. Now that we're married with children, we eat at home more often than not, and I think it's safe to say that we like it better this way!




I cook a lot. I have more than a dozen cookbooks, but I find inspiration from all over. One of the most satisfying feelings in the world, to me, is knowing that I made something that people enjoy. It's the best when it's one of the people I love more than anything enjoying it.

Because Matt works long hours, I like dinners that are easy to throw together, don't make a mess out of our tiny kitchen, and taste great. It's rare that I actually make a meal like this, but this one right here is one of them!

One Pan Chourico and Veggies


You Need:
1 lb Chourico Sausage, sliced (we usually find this near the beef, poultry, and other meats)
1 medium onion, diced 
4-5 potatoes, peeled and quartered (I used red potatoes, you can use any you'd like, I'm sure)
Half (or whole) bag of baby carrots, rinsed
1 bunch (little less than a pound) of asparagus, cut into bite-sized pieces
Olive Oil
Salt
Pepper


1. Preheat the oven to 400°
2. Place potatoes and baby carrots on a large baking pan (I used a 9x13 casserole dish) and drizzle with olive oil (about 3 Tablespoons). 
3. Add salt and pepper, to taste, and toss to combine. Place in preheated oven for 15-20 minutes.
4. Remove the potatoes and carrots from the oven and add the asparagus, chourico, and onion to the pan. 
5. Drizzle new additions with another 2-3 Tablespoons of olive oil and add a bit more salt and pepper, to taste. 
6. Carefully toss all ingredients together and bake for another 15-20 minutes, until your veggies are roasted to your liking. 
7. Remove from the oven and plate it up. 


The Finished Product- Nice and Easy!



This one made Matt's favorites list because he likes almost anything with asparagus. I love this dish, but that's my least favorite part of it, so he always gets a little extra. I hope you try it out and enjoy it as much as we do!
