Taco Bell Breakfast Quesadilla Made At Home #Recipe


I'm not going to pretend I'm better than anyone. I like Taco Bell. I'm an "organic mama" and I like Taco Bell. Why do I feel like there are thousands of eyeballs looking at me with the whites showing and ugly expressions gasping in disgust? 

Don't act like you didn't silently judge me. Taco Bell is good and if you don't agree, that is ok. We just can't have special Taco Bell moments together. That being said, I seriously RARELY visit the fine dining establishment, much to my chagrin. 

Instead, I try to create some of the items I love, at home. Nachos, crispy chalupas and breakfast quesadillas are just a few that I think I have mastered (or at least my family will eat it and enjoy it which always feels like an accomplishment).

If you like breakfast for dinner, you will love these. I almost hesitate to call it a "recipe" because it's literally just throwing some ingredients together and creating something so mouth-wateringly delicious, you will probably wonder why you never made it before!

Breakfast Quesadilla

Ingredients (subject to change depending on personal preference)

*6-8 eggs (family of 4)
*American cheese or cheese of your liking
*Butter
*8 soft flour tortillas
S&P to taste
(if you want to add a breakfast meat to your quesadilla, that would work well)

1. In a large skillet, add 2 tablespoons of butter and sauté your eggs until tiny crumbles form. You do not need to add milk to this scramble.
2. Once the eggs are cooked, add salt and pepper to taste and begin your assembly.
3. Add cheese and crumbled egg to tortilla and top with a second tortilla.
4. Add a tiny bit of butter to a clean skillet and sauté the assembled quesadilla for 2 minutes on each side or until crispy and the cheese melts inside.

Slice and enjoy!





I baked some tater tots in my handy dandy toaster oven (that I use for everything!) as a quick breakfast side dish and sliced some strawberries too.






This little guy is my favorite guy to cook for. He LOVES every kind of food and never turns up his nose at my creations! I'm so thankful to have one child without a picky food bone in his body!
