Parmesan Okra

Okra is that veggie that just keeps on growing and growing.  And I feel like there aren't that many ways to eat least that I know of.  My in-laws have given us a lot of okra this summer and I was starting to get really tired of okra until my mother in law shared a new way to fix it and now I could eat it daily!

Let me start by apologizing for not having pictures to show you.  I have quite a few that I took when I made this over the weekend, but I am having problems with my phone and can't get any of my pictures off of it.  If I can figure out this problem, I will come back and add pictures of my okra.

This is so easy and so yummy. 

Cut off the stem of the okra. Wash the okra and pat it dry.  
In a big Ziploc baggie, add the okra, 2 Tbsp. olive oil and 1/4 cup Parmesan cheese.  Gently shake to cover okra. Make sure the okra is arranged on a single layer on the baking sheet. Broil the okra in your oven for 5-10 minutes.  This will depend on how you want your okra.  The first time I made it I just did 5 minutes and I thought it was still too tender.  I have figured out that I need to do it about 8-10 minutes because I like it a little crispy.
