Chicken Philly Skillet #Recipe


I'm no stranger to searching for quick meals to throw together during the week. Our evenings always seem to be busy, and dinnertime usually feels rushed. When Sacha and I were first married, I enjoyed coming up with unique meals and didn't mind spending more than an hour cooking. I don't have that kind of time on my hands these days, and chances are, neither do you. I've grown fond of one pan dishes. Whether they're baked or roasted in the oven, or just thrown together in a skillet on the stovetop, one and done is the way to go!

We have a few go-to meals which are easy to prepare and take just a few minutes to cook and serve. One of our favorites is a play on Philly Cheesesteaks. We swapped steak for chicken and ditched the bread for a low carb version of a classic sandwich.

Chicken Philly Skillet

You Will Need:

2 Boneless, Skinless Chicken Breasts, thinly sliced into strips
1 Vidalia Onion, thinly sliced
1 Green Pepper, thinly sliced
6 Slices Provolone Cheese


For this recipe, you can use a skillet or a wok. In my opinion, using the latter seems a bit easier. Also, if you don't want to use the standard stove, an indoor wok burner could come in handy. There's the outdoor version as well, depending on your needs.

Heat 1 tsp of olive oil in a skillet over medium-low heat. Add onions and peppers. Sautee until cooked, and they have a golden-brown color.

Add sliced chicken and cook on medium heat until chicken is cooked through- about 5 minutes. 
*Optional- loosen any brown bits in the skillet with a tiny splash of white wine, and gently scrape and toss with the chicken and onions & peppers.


Cover the chicken with sliced provolone cheese. Cover and simmer on low heat until cheese is melted.


Serve it up! We usually have a side of steamed veggies with our Philly Skillet meals, or we have broccoli tots! Tots aside, this meal is healthy, delicious, and it's great for anyone who might be following a low carb or Keto diet plan.

We have this meal once every couple of weeks. It takes about ten minutes to make, and no one's ever left hungry after this tasty dinner. The best part? I only used one pan to cook in, so clean up is super quick and easy!
