5 Minute S'mores Mug Cake


Over Mother's Day weekend, my husband's grandparents came to visit for a couple of days. My son B (7 years old), excitedly told his Nana that we were going to be making a S'mores Cake. She thought that sounded mighty interesting, and asked me what all went into it? The S'more Cake idea was news to me, and it's all B could talk about for the rest of the weekend. We were so busy celebrating our moms and grandmas, that I didn't have the right frame of mind to figure out a S'mores Cake. I know, however, that I needed to surprise B with the ultimate S'more Cake sooner rather than later.


I love cake, but I just don't want lots of it sitting in our house. I will absolutely eat all of it, and regret it later on. I'm not the biggest S'mores fan, but my kids are, so rather than make an entire cake, I thought it would be fun to make them individual S'mores cakes in mugs, and let them add the s'mores goodies, themselves.


Start with a basic mug cake recipe

Mug cakes are so magical! They take almost no time to throw together, and you literally bake it in the microwave, inside of a mug. You probably have everything needed for a chocolate mug cake on hand in your pantry & fridge. I hadn't planned on making the mug cakes- it was a spur of the moment treat for the kids!

We use a pretty basic chocolate cake recipe for our chocolate mug cakes...

2 Tsp Unsalted Butter
1/4 Cup Chocolate Chips (we use the mini chips)
1/4 Cup Buttermilk
3 Tbsp Sugar
2 Tbsp Cocoa Powder
1 Tbsp Brown Sugar
1/2 Tsp Vanilla
2 Tbsp Self-Rising Flour
1 Egg


Your cake will be moist & delicious! 

Directions

Melt the butter in the microwave, and stir in the chocolate chips until smooth. You may need to microwave an additional 10 seconds.

Add all of the ingredients except the flour to the butter/chocolate mixture. Mix until smooth. Gradually add the flour and mix until incorporated.

Fill the mug halfway. Do not over-fill. Remember- the cake will rise as it bakes in the microwave. Microwave for 60 - 90 seconds. Time may vary depending on your microwave.



Set Up a S'mores Toppings Bar

We set up a little toppings bar for the kids so they could create their own S'more cake creations. Our toppings bar included:

Mini Marshmallows
Mini Chocolate Chips
Crushed Graham Crackers
Sanders Chocolate Fudge Topping (our favorite!)

Finally- he has his S'mores cake!

The cake was so yummy! It was moist, fluffy, and the added toppings made it extra delicious. We had a lot of fun just hanging out with the kids in the kitchen on a Friday night at home. It hurts my momma heart to continually tell my son, 'No, not tonight.' He is such a creative little dude, and I was excited that we were able to figure out a way to make his S'mores Cake idea happen. He absolutely loves this cake & it couldn't have been easier to make + clean up!

  1. Love that the cake is in mugs! Not only does is keep me from eating too much, but I think the kids will think it's special to have their own mug cake they can help make.
