Veggie Pasta Lunchbox Recipe



Winter break is wrapping up and it is time to head back to school. If your household is anything like ours then school lunches usually consist of peanut butter and jelly or some form of lunchable. The inability to pack food that needs to be heated adds extra pressure to find healthy lunch options that our kiddos will eat. 


Last spring, we purchased tri-color veggie pasta with the hopes that the fun shape and different colors would encourage our three-year-old to eat hidden vegetables in his pasta for dinner.  At the time I was pregnant with our youngest child and would often have late night snack sessions at 2am (I'm not ashamed one bit).  The proximity of the bedrooms to the kitchen prevented me from using the microwave so I took our plain cold veggie pasta added a bit of olive oil, salt, pepper and Italian seasoning and was surprised at how delicious it was. 


For my son's lunch, I added some quartered baby tomatoes and he ate every bit of it for lunch! Veggie pasta has a great taste by itself but you could add any number of extra items to it and it would be delicious.
