My family loves chili beans and I am all about easy....and these my friends are EASY!! They are perfect for a cold winter night.
I'm going to list the recipe the way I originally got it and add my changes in parenthesis.
Easy Chili Beans
This recipe will make 4-6 servings. (I usually double so we have lots of leftovers for a couple other meals or I freeze some and have another time)
1 lb. ground beef (I use turkey)
1 small white onion, diced (I leave this out because I do not like onion)
3 cans diced tomatoes with green chilies
2 cans beans, drained, black bean, kidney beans, or comb (I usually do just kidney beans)
2 Tbsp. chili powder
Optional toppings: shredded cheese, sour cream, cilantro, chopped green onions, etc.
In a large stockpot, cook meat until browned. Using a slotted spoon, transfer the cooked meat to a separate plate and set aside. Reserve 1 tablespoon of grease in the stockpot, and discard the rest. Add the onion to the stockpot and saute for 4-5 minutes, or until soft. Add remaining ingredients and the cooked meat to the stockpot and stir to combine. Bring to a boil, then reduce heat to medium-low, cover and simmer for 10 minutes. Serve and enjoy.
*You can also make this in the slow cooker. Just brown your meat on the stove and drain it before adding the meat to your slow cooker. Slow cook the chili on low for 6-8 hours or high for 3-4 hours.
