Easy Make & Freeze Breakfast Sandwiches

If mornings at your house are anything like mornings at mine, they're pretty crazy and you have little to no time to get everyone properly fed before you all have to be out the door and on your way to school, work, etc. I was spending so much time each morning, making different breakfast items for everyone, trying my best to make sure everyone got to eat something they liked... and then who would wind up not eating a proper meal? That's right, mom (i.e. me)! I finally wised up and decided to make a few freezable breakfast items that can be warmed in the toaster oven. Our go-to breakfast meal is a sausage, egg & cheese English muffin sandwich. Easy to make, easy to freeze, and then easy to heat and eat- anywhere!

To make this yummy breakfast sandwich, you'll need...
1 package of English Muffins
6 eggs, scrambled & cooked
Shredded Cheddar Cheese
Optional- meat of choice (ham, bacon, sausage)

Start by scrambling and cooking the eggs. Add salt and pepper to taste, or additional seasoning, just as minced onion.

Toast 6 English Muffins very lightly- either in the toaster or under the broiler in the oven.

Add a layer of the scrambled eggs to the bottom of an English muffin. Use about 1 egg per sandwich. Sprinkle shredded cheese on top. Add breakfast meat of choice, top with muffin topper.

Wrap a slightly damp paper towel around each sandwich.
Wrap each sandwich individually with plastic wrap or parchment paper.
Place wrapped sandwiches into a freezer safe container or zip bag for storage up to 2-3 weeks.

Tastes just as good as fresh!

When you're ready to eat the sandwiches, remove from container or bag and remove plastic wrap. Keep sandwich in the paper towel and microwave on high for 1 minute. May need additional time depending on your microwave. Grab, & go!

This is the perfect make-ahead breakfast sandwich that the whole family will love! Couldn't be easier to make, is super budget friendly, and will save you from spending money at the drive-thru and risk being late for work!
