Quick, Easy & Healthy Pasta Salad #TastyTuesday

I am all about saving time and money, as I'm sure you are too! I've never been one to jump on the meal prep train, but after making my lunch for this week, I could be converted! 
Lately, money has been tight in our house. My supervisor caught me eating plain macaroni at my desk last week while working through my lunch break. Rather than giving me a raise (ha), she suggested I add some cheap, delicious, and good-for-you ingredients to my pasta to make myself a yummy pasta salad. For less than $6, I now have a healthy, delicious lunch for the entire week!

I used:

1 12 oz box Tricolor Rotini Pasta

1 large Cucumber, quartered

1 container of Cherry Tomatoes, halved

1 6 oz can of Black Olives, halved

Kraft Zesty Italian Salad Dressing

This was all strangely soothing to put together - kind of mechanical, very colorful, super easy, and fun. After I boiled the pasta and chopped all the veggies, I mixed it all together in a large bowl and added in just a bit of Italian dressing. Then, I sectioned it off into 4 separate Tupperware containers - I'll be able to just grab one and throw it in my lunch bag on my way to the office! The next best part is that I can eat it cold. More time for ME on my lunch break!
