Green Chicken Chile Enchilada Soup
I was introduced to this soup by my mother in law (who got the recipe from my sister in law) last month... which leads me to this confession... 

We have made and eaten this soup probably 5 times in the last month! 
FIVE TIMES! 

In our house, we love all foods southwest/texmex/spicy (well I love the spicy and my husband tolerates it).  And this soup fits the mark perfectly!

You can find all kinds of fancy versions of this soup on Pinterest... however, my adaptation has taken on a favorite cooking ideal of mine... simplicity.  And in this case, simplicity=cans.

Lots of cans.

So if you don't know how to use a can opener, you might want to find a different take on this tasty soup!

However, if you can handle opening lots of cans, and think you might enjoy, head on out to Kroger and visit 3 aisles to gather your supplies...

1 10oz can green enchilada sauce
1 can white beans (drained and rinsed)
2 cans black beans (drained and rinsed)
2 cans shredded chicken
Canned, Shredded Chicken. Simplicity.

1 8oz can diced green chiles
1 can diced tomatoes (or substitute 1 can rotel if you like extra green chiles!)
4tsp chili powder
1Tbs cumin
3/4tsp paprika
1 tsp salt
1/4 tsp pepper
2 cups chicken broth
1 8oz package cream cheese

(Sorry it get's a little complicated with all the spices...)

If you're feeling fancy/fresh/healthy... make sure you grab the ORGANIC cans! (although if you can't' find everything organic, does it cancel out all the organic-ness of the rest of the ingredients?)

So in order to prepare this fine cuisine, open all the cans and please don't cut yourself on the lids!

Then add it all to the pot except the cream cheese and bring to a boil.

Then turn the heat down to low and cook for 10-15 minutes.

Then add cubed and softened cream cheese and stir until melted/blended.

This soup is seriously good.  It has been a major hit with everyone we have shared it with the five times we have enjoyed it in the last month!
