Easy Granola Bites #TastyTuesday

If there's one thing I love, it's a quick and healthy snack that the whole family will enjoy. Right now, I am trying to watch what I eat to a degree. I have some pesky pregnancy weight that just isn't tapering off the way I'd hoped it would, despite the fact that I am breastfeeding. I'm sticking with healthy snacks that do double duty for me- meaning that I am making snacks that also help with lactation (increasing milk supply).

I love this recipe for Easy Granola Bites (also called Boobie Bites for breastfeeding moms!). It's so simple to throw together, and there is zero baking involved.

You will need:

1 cup (dry) oatmeal (I used old-fashioned oats)
2/3 cup toasted coconut flakes (optional)
1/2 cup peanut butter.
1/2 cup ground flax seed.
1/2 cup semisweet chocolate chips (or vegan chocolate chips)
1/3 cup honey or agave nectar.
1 tablespoon chia seeds (optional)
1 teaspoon vanilla extract.

I omit the coconut flakes and the chia seeds when I make these, because my family doesn't care for those ingredients. The ground flax seed is a milk boosting ingredient!

Simply mix all of the ingredients together, and then pop the mixture into the freezer for 30 minutes. Next, use a tablespoon measuring spoon to scoop the mixture into bite size balls. Store on wax paper in an air-tight container in the refrigerator up to two weeks.

These are so delicious. I usually grab a few at a time, and enjoy them with a glass of milk. They're the perfect afternoon snack, or evening snack, if you're like me and need a little sweet after dinner. Everything in the balls is healthy, so you don't have to worry about packing on extra weight from enjoying these. You can also add in different ingredients like raisins, dried cranberries, change the chocolate chips to peanut butter chips, etc. Just have fun with it and make it to suit your family's tastes.
