We had a delicious diner last night, and being that today is "Tasty Tuesday" I thought I would go ahead and share it with you guys!
Here's What You Need:
1 pound chicken breast, cut into bite sized pieces.
2-3 zucchini, peeled and sliced
1 onion, chopped however you'd like
1-2 green peppers, cut into strips
Non-Stick Cooking Spray
Your favorite seasonings (I used Weber's Grill Creations Kick'n Chicken blend)
Preheat the oven (or use your grill) to 425. Cut your vegetables and combine them together with about 2 Tablespoons of olive oil in a medium bowl, tossing to coat, set aside.
Cut the chicken into bite sized pieces, set aside.
Grab 4-5 pieces of aluminum foil, each about 12 inches long, and spray with non-stick cooking spray. Add vegetables to the center of each sheet, sprinkle with seasoning, top with chicken, and then sprinkle with a little more seasoning.
Once each sheet of foil has the vegetables and chicken on it, fold it up, making sure to pinch the edges to keep a good seal. Place the packets on a baking sheet and put in the oven for 25 minutes.
Let the packets sit 5 minutes and then open carefully, lots of steam will be escaping.
Enjoy the packets as is, or serve with brown rice!
