Asian Tacos (Inspired by a Betty Crocker Recipe) and Egg Roll |
Last Tuesday, we had a dinner dilemma in Wigglesworth Manor. It was "Taco Tuesday", but we had some amazing homemade egg rolls from our friend Chanty that I wanted to incorporate into dinner. Thank goodness for Google!
I did a quick search for "Asian Tacos" and found a recipe from Betty Crocker, that I modified a bit, to work with what I had on hand.
Here's what you need:
1 Tablespoon of vegetable oil
1 pound of boneless, skinless, chicken breast tenderloin
1 pound bag of frozen broccoli, peppers, onions, and mushrooms
(Aldi had a bag of veggies with cous cous, I used that)
1/3 cup honey
1/4 cup soy sauce (I used about 1/2 a cup, it was a little too much)
1/4 cup brown sugar
Flour Tortillas
Heat the oil in a frying pan, over high heat. Add the chicken, cook for about 5 minutes, making sure it is no longer pink. Remove the pan from the heat.
Lower heat to medium/high. Add the vegetables to frying pan (and then the pan back to the heat) and cook 2-3 minutes, until veggies are crisp-tender. Drain excess liquid and then add the honey, soy sauce, and brown sugar. Mix to cover chicken and vegetables and let cook another 2-3 minutes to warm the "sauce" through.
Scoop some into a flour tortilla and there you have it! Enjoy!
