Can I just say how much I love my slow cooker? It seriously makes my life so much easier. If only my husband felt the same way. He is definitely not a fan of slow cooker meals, and neither is my five-year-old son. I wish they would both jump on the slow cooker meal bandwagon with me! We'll soon have a newborn around here, and I know that the slow cooker will be a huge time and sanity saver for me.
We've been eating a lot of chicken lately, so I am planning on making a meal list of chicken dishes that I can easily prepare in the slow cooker.
A favorite of mine is Slow Cooker Chicken and Potatoes with Green Beans.
This recipe calls for simple ingredients, which will delight your tastebuds!
All you'll need:
Your Slow Cooker
2-3 Boneless, skinless chicken breasts
3 Cups of Potatoes, cleaned and diced
2-3 Cups of Fresh Green Beans
1/3 Cup Fresh Lemon Juice or Chicken Broth
1/4 Cup Olive Oil
1 tsp. Dried Oregano
2 Minced Garlic Cloves
1 tsp. Onion Powder
Salt and Pepper to Taste
Add the chicken, potaotes and green beans side by side in the slow cooker.
In a medium sized bowl, whisk together the lemon juice, olive oil, oregano, salt, pepper, onion powder and garlic cloves.
Pour this mixture evenly over the chicken, green beans and potatoes.
That's it- easy as could be. I love using my slow cooker on Mondays, Wenesdays, and on the weekends, too. Mondays, Wednesdays, and Sundays are our busiest days of the week, and we're often not home until after 6:30 or 7 pm. Having a meal ready to go in the middle of the afternoon means it's ready when we walk in the door on these busy nights. It also saves us from falling into the trap of grabbing dinner on our way home, and it saves us money.
