So, my husband got me a vacation for Christmas and we've been really trying to eat healthy and exercise so we are in better shape when the time comes to take out trip. I've been trying a lot of new recipes and even coming up with some on my own. One of my favorites was the healthy chicken parmesan with polenta and sautéed spinach. This entire plate of food, and it was a lot of food, is only 544 calories!

To make this delicious dish for two...
Ingredients
1 - bag of fresh spinach
1 - Roll of polenta (found in the pizza sauce aisle)
2 - boneless skinless chicken breasts
1 - jar of your favorite pasta sauce (I used Ragu)
1 tsp (or more if you like) chopped garlic
1/4 C chopped onion
grated parmesan cheese
Directions
Chicken:
Put chicken in baking dish and cover with pasta sauce
Bake chicken @ 350 until done (I used frozen chicken so it took about 45mins but raw chicken will take less)
Polenta:
Place 4 - 1/2 inch slices of polenta in sauce pan
Mash the polenta up and add just a touch of milk to help cream up the polenta
Add as much or as little parmesan as you like as well as a pinch of salt and pepper
Cook on med until warm (the polenta is already cooked)
Spinach:
Put 1TBS olive oil in sauté pan on med heat
When oil is slightly hot add 1tsp of crushed garlic and 1/4C chopped onion
When the onions and garlic have softened add entire bag of fresh spinach
Cook, stiring often, until spinach is how you'd like it
Top the dish with some more pasta sauce and some parmesean cheese and enjoy!!
