#TastyTuesday Ground Beef stuffed potatoes... It's what's for dinner =)


Ground Beef Stuffed Potatoes... It is what is for dinner tonight!!
What you need:
4-6 potatoes depending on size of family (we like gold potatoes, but whatever is your fav)
1-2 lbs ground beef (again depends on family size)
1 box of Velveeta Cheese
1 small tomato
1-2 green onions
Sour Cream
How to make it:
Cut the Velveeta into cubes.
Dice tomatoes and onions.
Cook the potatoes. I usually just microwave our potatoes. Just clean them off, poke holes in them with a fork, and pop them in the microwave. I make 1 potato per person.
In a skillet, brown ground beef and then drain. Add Velveeta, tomatoes, and onions. Frequently stir until all the cheese is melted, and the mixture is well blended.
Cut the cooked potatoes in half (I always add a bit of butter and salt and pepper) then top each half of the potatoes with the meat mixture, then top with sour cream.
YUM! it's easy peasy, warm and hearty, and a family favorite! We eat ours with broccoli and cheese. There is never a drop left on anyones plates! Enjoy!!
