Looking for a simple, and sweet holiday cookie recipe that your family and guests will enjoy? Russian Tea Cakes are one of my favorite holiday cookies. I remember my mom making these for Christmas, and special occasions when I was growing up. They are also called Mexican Wedding Cookies, and my son calls them Snowball Cookies. These cookies are super easy to make, and require very few ingredients. You can have a batch made and ready to eat or share in about 30 minutes.
To make these yummy cookies, you will need:
Two sticks of unsalted butter, softened
2 Cups All Purpose Flour
6 Tablespoons Confectioners Sugar (Powdered Sugar)
1 Tsp. Vanilla Extract
1/3 Cup of Powdered sugar, reserved
Pre-heat your oven to 350 degrees.
In a medium sized bowl, cream together the butter and vanilla until smooth. In another bowl, combine the flour and powdered sugar. Next, add the flour and 6 Tbsp. of powdered sugar mixture to the butter mixture. Mix until smooth. Using a cookie scoop or a Tbsp. measuring spoon, scoop little balls of dough, and roll them into balls. Place on a lined baking sheet (I used my Silpat sheet), and bake for about 12 minutes.
Immediately after baking, roll the cookies in the reserved powdered sugar. Sometimes I roll them more than once. You want to do this when the cookies are still soft and warm, otherwise, the powdered sugar won't stick to the cookies very well.
You should end up with a yummy batch of powdered sugar coated little cookie balls (this recipe makes about 25 cookies, if you use a Tbsp. to measure the dough).
That's it! These cookies will crumble and melt into your mouth, and your family will eat them right up! My husband came home to a fresh platter of these yesterday and immediately said, 'Oh, why did you have to make these? I love these things!' I know the way to the man's heart... what can I say?
