Tasty Tuesday: Turkey Kielbasa with Beans and Tomatoes



I have a massive collection of cookbooks, but there are a few that I use almost every time I make up a meal plan. You'd think that would mean that I am familiar with the recipes in these books, but recently I found one that I had never seen before and it was for Turkey Kielbasa with Beans and Tomatoes. 

One of My Favorites and Where I Found Today's Recipe


You Will Need

1 1/2 cups rigatoni (I used penne)
Vegetable Cooking Spray
10 ounces turkey kielbasa, cut into 1/2-inch slices
1 small-medium onion, chopped
4 garlic cloves, minced
1 (14.5 oz) can of cannellini beans, drained
1 (14.5 oz) can no-salt added diced tomatoes, undrained 
2 Tablespoons balsamic vinegar (I used tap water, I can't stand the smell of vinegar) 
1 teaspoon dried thyme
1/2 teaspoon salt
1/2 teaspoon ground pepper


Directions 

Cook the pasta according to package directions, omitting salt and fat; drain and keep warm.
Coat a large, nonstick skillet with cooking spray, place over medium heat until hot.
 Add the sausage and onion, cook for 8 minutes, being sure to stir often. 
Add the garlic, and cook for another minute, stirring frequently. 
Stir in the beans and remaining ingredients. 
Bring the contents to a boil, cover, and reduce heat to low. 
Simmer for 10 minutes, then stir in the pasta. Serve immediately.

We really enjoyed this dinner! It's extremely filling and absolutely delicious. According to the book, the recipe serves 4 people, but we had some leftover, I'm guessing that's because Drew and Reese have such small stomachs. I can't believe this was our first time trying this recipe, but it definitely won't be our last!
