Tasty Tuesdays: Easy Brunch Bake #Recipe


I don't know about you, but I love Saturday morning breakfast. It's one of those things that I seriously look forward to about the weekend, and it brings back memories of my mom making breakfast for my family when I was growing up. Though I love Saturday mornings, I am usually super busy! I attempt to sleep in until 7 am or so, and then I am up, trying to squeeze a few things in before my hubby and kiddo wake up, and then, it's off to the races- usually running errands and such. When we do have a nice breakfast on a Saturday morning, it has to be something that's quick, easy, and something that the whole family will enjoy.



I found a great recipe for an Easy Brunch Bake, and made a few modifications to make it work for our family.

You will need:
1 Can of refrigerated biscuits or crescent rolls
Cooked sausage (crumbled), or ham
1/4 chopped onion
1/2 Cup shredded cheddar cheese
6 Eggs, scrambled
Splash of Milk
Salt and Pepper to taste


Step 1: Coat an 8x8 baking dish with cooking spray. Cut biscuit dough into quarters, and place them in the baking dish.

Step 2: Add sausage or ham on top of the biscuits.

Step 3: Cover with onion and cheese.

Step 4: Pour in the scrambled egg mixture (I added a splash of milk, salt and pepper).

*You can also add in other ingredients: mushrooms, tomatoes, green pepper, etc. Use whatever you have on hand!

Step 5: Bake at 350 degrees for 30 minutes. Should be slightly golden brown on top and eggs should be cooked thoroughly.

Cut into squares for serving...

Makes a wonderful quick and easy breakfast for a family of 4-6.

Everyone loved this recipe when I made this easy brunch bake over the weekend. It was quick and easy to throw together, and I would happily serve this to guests, with confidence. If you'd like to put your own spin on this, just change up some of the ingredients. Bacon would be delicious in this dish, as well! You can also easily double this recipe to serve it to even more loved ones!
