Tasty Tuesdays: Pesto Stuffed Chicken #Recipe


Happy Tuesday! Today, we're back with another fantastic chicken recipe! We eat a lot of chicken in our house, and I tend to become bored with making chicken the same old four or five ways my husband enjoys most. Don't get me wrong- I love making foods that he enjoys, but I also like trying out some new ideas!

Pesto Stuffed Chicken Breasts

I am a huge fan of any type of Italian chicken, so I wanted to try a twist on a chicken roll-up, by making Pesto Stuffed Chicken Breasts.

You will need...

1 boneless skinless chicken breast per person
1 Small jar of pesto- or small amount of homemade pesto, if you prefer
1 Cup Mozzarella Cheese, sliced or shredded
1 Egg
1/3 Cup Italian Breadcrumbs or Panko


Step 1- Pound out the chicken breasts until they're thin, but not falling or shredding apart.
Step 2- Spread a thin layer of pesto over 1 side of the chicken breasts.

Step 3-Add shredded Mozzarella Cheese on top of the pesto.
Step 4- Carefully roll the chicken up (like you might a burrito), nice and tightly. Secure the ends closed with toothpicks, if needed.

Step 5- Coat the rolled up chicken in a beaten egg wash.
Step 6- Roll the chicken in the breadcrumbs until well coated.

Step 7- Place chicken into a baking dish, and let it rest while the oven preheats to 350 degrees.

Step 8- Lightly spritz the chicken with an olive oil cooking spray, and then bake for 35 minutes at 350 degrees. *Oven time and temp may vary.

Step 9- Remove from the oven and let the chicken rest for 5 minutes before plating.

Serve with your favorite side dishes. This chicken would be yummy with a pasta side, a salad, or a vegetable. We had zucchini on hand, so I sauteed a bit of zucchini to serve alongside the chicken.

When you slice into your chicken, it should look something like this.

Sprinkle a bit of Parmesan Cheese onto the chicken and/or your side, and enjoy! I enjoyed this dish so much (and so did my hubby), that we've added it to our dinner menu rotation. This is wonderful paired with a crisp white wine, like a nice Pino Grigio. We can't wait to wow friends and family the next time we get together for a nice dinner with this great recipe!
