Bean Pot Ice Cream Cake Recipe

Brought to you by Celebrating Home Sr. Rising Star Designer, Ondria Witt

 Venetian Home (Parsley) Bean Pot

 Start with this...

You will need:

1 angel food cake (you can buy one already made or make your own)
1 can of fruit pie filling (I like to use cherry)
1 carton of softened ice cream (I used vanilla)

-If you don't have a Bean Pot, a freezer-safe casserole dish will do just fine.

Slice your cake and line your Bean Pot...

Spread the ice cream over the cake, and keep building, until...

You end up with something like this! (I added blueberries to the top of my cake.)

Into the freezer for 3 hours...

Put your Bean Pot in your Bean Pot Basket, and hit the road!

Directions:

Slice the angel food cake, and cut each slice in half.
Line the bottom of your Celebrating Home Bean Pot or dish with a layer of angel food cake.
Spread a layer of the softened ice cream over the layer of cake.
Continue this process until you have three layers of cake, and ice cream- ending with an ice cream layer on top.

Place the lid on your Bean Pot, or cover with plastic wrap.
Place Bean Pot in the freezer for 3 hours.

After the cake has set, remove from the freezer, and scoop out to serve.
Warm up your favorite fruit pie filling, and serve over top of the cake.

I added blueberries to my cake for the 4th of July. Red, White and Blue dessert!

~You can also garnish with chocolate sauces, strawberry sauce, etc.
~Pound cake may be used in place of angel food cake, but regular cake will break apart against the spreading of the ice cream.

Celebrating Home Bean Pots are a must-have for every cook, non-cook, or busy parent. They are oven, microwave and dishwasher safe. I love my Bean Pots, which create a clay oven when cooking and baking, sealing in moisture. This means everything comes out nice and juicy, evenly cooked, etc. My husband loves everything I make in the Bean Pots- and commented how easily they come clean, the last time he did the dishes. No soaking, no scrubbing- just a soapy water wash and wipe, and it's clean! I use my Bean Pot for baking casseroles, side dishes, desserts, entrees, and also use it to serve cold salads, appetizers, breakfast dishes, and more! I take it everywhere, in my handy Bean Pot Basket. Celebrating Home offers four recipe books, and I have my own collection of Bean Pot recipes on my Bean Pot Diva Blog!

I love the Bean Pots for so many reasons... but the coolest thing I can do with my Bean Pot is to make a delicious dump cake, right in the bean pot, in the microwave in fourteen minutes! Unexpected guests? No problem! I always keep a box of cake mix and a pie filling on hand for last minute desserts!
