Got Leftover Chicken?

We have had a really rough week. Sacha has been sick, his grandpa has been in the hospital with pneumonia, Balian had a tummy bug on Thursday, he has a new tooth pushing through, and he's catching Sacha's cold, to top it all off. Thursday was by far the worst day for me... the tummy bug stuff was just gross. Needless to say, I have been lacking sleep and energy, and I just didn't have it in me to cook dinner on Thursday night. My mother-in-law was super sweet and ran to the grocery store for us to pick up a few things, and she brought us a rotisserie chicken so I didn't have to worry about dinner.

For some reason, I always forget about rotisserie chicken. For like, $5.00, you can pick one up, serve it with some microwavable veggies and a pack of mashed potatoes or something for a quick and easy meal. We never eat an entire rotisserie chicken in one sitting, so there are always leftovers. My husband HATES leftovers, though. I'm cool with eating them for lunch, but forget trying to make another meal out of something that's a day or two old.

I was not about to let the perfectly good leftover chicken go to waste. We had fajitas on our dinner schedule for Friday night, so instead of using steak, I shredded the leftover chicken, and added a little water to my skillet, tossed in some fajita seasoning, then added some sauteed onions and red peppers, and voila- there was a super quick and easy dinner! My hubby ate it (he never turns down Mexican food), and even said it was good- knowing full well that I used leftover chicken!

I think I might want to pick up a rotisserie chicken once a week and use it for multiple meals or something. I could use it for casseroles, tacos, pot pies, soups, chicken salad, and probably a whole lot more than I even realize. I'm going to investigate some recipes and share them with you all. Don't get me wrong- I love to cook, and before I became a mom, I had a lot more time to make things that were time-consuming. Now, I am fine with cutting corners if it means I can spend more time with my family and less time slaving away over dinner and cleaning up a big mess.

  1. We love to use rotisserie chicken. We like it in the crockpot for chicken tacos, chicken and dumplings, black bean chicken, gosh, it is just so nice to use.
