Well, It's Wednesday...

So, here we are... another Wednesday. I, like most of you, look forward to Wednesdays, because it means that it's just that much closer to the weekend. And in just two short weeks, our family will be headed to the beach for vacation! It'll be Balian's first real beach trip. We went to the beach the week after Christmas- we do every year, but now he'll really be able to play and touch the water. We're very excited about the impending adventure!

I had a nice Mother's Day. It was my very first one, in fact. My wonderful husband surprised me by taking me out on a date to my favorite local restaurant  (Mambo Grill and Tapas) on Saturday night. We had a great time. On Mother's Day, we spent the morning at church (from 8:15 to about 12:30), like we do most every Sunday. We go to both our contemporary and traditional worship services. After church, our combined families went out for lunch. I always enjoy it when both my family and Sacha's family get together for a meal- we always have a wonderful time. The afternoon was spent at home- Sacha hooked up our new dryer, I did laundry, Sacha went back to church for a rehearsal, and stayed home and played with Balian. 

Since I didn't get to do Mother's Day brunch on Sunday, I decided to make a special breakfast on Saturday morning... Stuffed French Toast! It was my first attempt. Some of my mommy friends have asked for the recipe, so to my recollection, this is what I did:

You will need:
 4-6 (or more, depending on how many you're feeding) thick slices of French bread
2 eggs
2 tsp cinnamon or nutmeg

Filling
1/2 block (about 4 oz) of cream cheese, softened
1 Tbsp Vanilla
2 Tbsp Sugar
*Mix together and put to the side.

Directions
Cut a small pocket in each slice of bread. 
Gently spoon the filling mixture into the bread pocket.

Mix the eggs and spice together, let bread slices soak up the egg mixture for about 7-10 minutes... OR you can do this overnight in the refrigerator.

In a lightly buttered (or sprayed) frying pan, cook the bread slices on med-low heat until golden brown. Serve with your favorite toppings: syrup, powdered sugar, fruit, etc...
