Creamy Crunchy Chicken Bake for Dinner Tonight! (Recipe and How-To)


Hello everyone and happy Wednesday! It's mid-week and if you are anything like me, Friday is so close I can taste it! In the meantime, while we are still sitting over here on Wednesday, let's at least taste something delicious. I'm attempting to transfer this recipe from my head to something legible that other's can read and understand. I really want everyone to go make this. Now! Right now. If you're eating anything else for dinner tonight, you're missing out.

I think I've played it up enough now. Let's get to cooking!


Your cast of characters:




Though in this particular picture, some items are not organic, there will generally will be organic and non-Gmo ingredients that you will see me cooking with.

INGREDIENTS:

Chicken tenderloins
1 Cup of Chicken stock
1 Bouillon powder pack
Spinach
1 Tsp Garlic
4 Tbsp of Butter
Approx. 3 Tbsp of flour
1 Cup Half n Half
Sour Cream
Mixed shredded cheese
1/3 Cup of Chopped Onion
Ritz Crackers sleeve (not shown)


Step 1: Boil chicken until cooked through. Let the chicken cool and then shred.

Step 2: Saute chopped onion (1/3 cup) and minced garlic with 3 Tbsp butter (REAL unsalted butter)


Step 3: It's ROUX time! Add the flour to the onion and butter mixture and stir until it begins to clump and look like the picture below:



Step 4:  Add about 1 cup of half n half and then add about 1 cup of chicken stock. Bring it to a simmer and whisk until it gets nice and luxurious (thick).


Step 5: While it's thickening, add as much spinach as you desire and also add the packet of seasoning.




Step 6: How can something that looks this amazing taste anything other than... well, amazing! I combined a few steps here. Chop up your chicken and add to a large bowl. Add the cheese, sour cream and thick spinach mixture. Let everyone mingle together in the bowl.





I divide the mixture into 2 square baking dishes.


Step 7: Melt the remaining 1 Tbsp of butter in the microwave with crumbled Ritz cracker crumbs. Mix the crumbs until coated in melted butter. 






The final step is to sprinkle the cracker crumbs evenly over the chicken mixture and BAKE at 350 degrees for 35 minutes. Everyone's oven is slightly different, so I would suggest checking on your dish sporadically and when the cracker crumbs become golden and bubbly, you are just about ready to devour!
