Cream Cheese Mints #tastytuesday


I saw this recipe on a friend's Facebook page and thought these mints looked delicious!  Mints are one of my most favorite things and there is a little local store here that has pulled Butter Mints at Christmas and I always go buy some.  These look like them so I had to try them out.  The recipe I used and that I am sharing with you came from Trish on the Mom on Timeout blog.  I did find many of these recipes on Pinterest and they were all about the same.


Cream Cheese Mints

Ingredients:
8 oz. Cream Cheese, full fat, softened
1/4 cup butter, softened
2 lbs. powdered sugar
1 -2 tsp mint extract
gel food coloring
1/2 cup powdered sugar for rolling mints

Directions:
Combine cream cheese and butter in a large mixing bowl until smooth.  Add one cup powdered sugar and mix until smooth.  Add the mint extract and mix until combined.  Gradually, add the remaining powdered sugar until smooth and consistent.  You can do this with mixer, food processor or by hand.  Separate the mixture into separate bowls, depending on how many colors you are doing.  Add a small amount of food color to each bowl and stir in until the color is uniform.  Cover and refrigerate for 2 hours or until firm enough to handle.  You don't want it sticking to your hands.  Line 2 quarter sheet pans with parchment paper and dust with powdered sugar.  Set aside.  Pinch off small amounts of the dough and form into 1 inch balls.  Roll each ball in powdered sugar and place on prepared sheets.  Gently press the tines of a fork into each ball.  You can also use the bottom of a shot glass if you don't want the lines.  Let stand uncovered for at least 4 hours or until the mints are firm.  If the bottoms have any moisture, flip them over and let stand again until the bottoms are also firm.  Store in an air tight container with parchment or foil in between rows for up to 2 weeks at room temperature.  Mints can be refrigerated or frozen, if desired.

So...the following pictures are from my personal experience making these mints.  They didn't turn out as pretty as what I saw on Pinterest, but they are AMAZING!!  Also, I am messy in the kitchen, so please excuse that in the pics!!
