I am crazy about chicken salad! There's so many different ways to make it, I want to share one I discovered with you. I like to make a large batch to keep in the fridge for lunches and snacks for a few days. Since it actually tastes much better after sitting in the fridge, I usually make it at night so it's ready for the next day.
Fresh Jalapeño Chicken Salad
Prepare Chicken
I used a whole rotisserie chicken from Costco this time but any chicken without a lot of seasoning will work great! Pull the chicken off the bone and remove any fat.
Chop Vegetables
Onions, tomatoes, and jalapeño. Amount of each varies with personal preference and how much chicken you use.
Toss Vegetables With Chicken
Add Mayo
A few large spoon-fulls
A few large spoon-fulls
Enjoy!!
I served it on some Hawaiian buns but it's also delicious on tortilla chips or over a simple salad.
